For obvious reasons, meal planning doesn't typically include salads. But considering they're arguably the easiest, quickest, and healthiest dishes you can prepare, The Modern Proper found a way around the expiration issue with . "I love the fact that I [can] prep all the components for this salad a day or two ahead of time, and once it's dressed and on my table, the celery and fennel will stay crunchy (unlike lettuce)," writes recipe creator and co-founder of The Modern Proper Holly Erickson. "It's the perfect make-ahead dish, and [it] travels really well, too." What's more is that the seasonal ingredients make it a great addition to any holiday spread. Ingredients for Salad:
Celery, thinly sliced
Small fennel bulb, thinly sliced
Pears, sliced or chopped
Diamond Brand Chopped Hazelnuts
Chopped tarragon and fennel fronds for garnishing
Ingredients for Dressing:
Ripe pear, peeled and cored
Extra-light olive oil
Apple cider vinegar
Salt and freshly ground pepper
Juice of half a lemon
Fresh tarragon, finely chopped
In a high-powered blender, blend all ingredients for dressing except for the chopped tarragon until smooth. Pour dressing contents into an appropriate container, and mix in the chopped tarragon.
Toss all salad components with the dressing. Serve sprinkled with fennel fronds, extra tarragon, and additional hazelnuts if desired.
